Mac\u00e9ration douce entre 3 et 5 jours, la fermentation alcoolique d\u00e9marre gr\u00e2ce aux levures indig\u00e8nes en cuve b\u00e9ton ouverte durant approximativement 16 jours<br \/>\nElevage : En cave, 10 mois en f\u00fbts de ch\u00eane fran\u00e7ais, et 20% en cuve \u00e9maill\u00e9e sur lie<br \/>\nSoutirage et assemblage en cuve pendant 6 semaines.
