Les vignes sont plant\u00e9es sur deux coteaux expos\u00e9s diff\u00e9remment, nord et sud du lieux dits \u00ab les bas liards \u00bb<br \/>\nProcessus de vinification : agriculture biologique. Vendanges manuelles.<br \/>\nTri et optimisation de la date de r\u00e9colte parcelle par parcelle.<br \/>\nSuivi de la maturit\u00e9, 30 % de grappes enti\u00e8res &#8211; Fermentation courte sans sulfites en cuve inox. Pas de pigeage. Remontages deux fois par jour jusqu&rsquo;\u00e0 la fin de la fermentation.<br \/>\n\u00c9levage de 15 mois en f\u00fbts de ch\u00eane bourguignon (15 % de f\u00fbts neufs).<br \/>\nMis en bouteille non filtr\u00e9.<\/p>\n<p><strong>Et dans le verre :<\/strong><br \/>\nRobe rouge cerise envo\u00fbtante. Bouquet d\u2019\u00e9pices saisissant, allant du poivre et de la noix de muscade \u00e0 des notes de paprika et de poivron vert subtiles et jamais trop prononc\u00e9es.
